Please someone could tell me what's that string floating away at the top of the 787's tail ??
I've made a little search but found no results, so sorry if it has already been answered...

its for various things I think including airspeed, wake turbulence etc

Was I the only one who was disappointed with the amount of wing flex? With those press shots showing incredible amounts, I wanted to see that on the real thing.

It was perhaps due to the light weight of the aircraft. Maybe see more flex on a fully loaded line version.

Those press shots where artistic renditions..   and the 787's first flight wasn't anywhere near MTOW.

They'll flex more when the bird gets more payload.

They close after the gear is out.

The gear bay doors were down on purpose. IIRC, the test pilots mentioned it as a method to correct the gear prior to landing. Gear bay doors being down is not entirely uncommon among test flights.
