It is cheaper buying 2x 2x2GB for 8GB, however you run the risk of each 2x2gb kit being slightly different in performance/stability from each other (DEFINITELY not a big deal at all, just advising you... I would get 2x 2x2GB kits )
I would say memory frequency is more important than latency in this case when you have the choice between 7 or 8.. I am currently running my 6gb kit at 9-9-9-24 which is the motherboard's defaults (my RAM is rated at 8-8-8-24) to rule out any instability related to RAM while overclocking.. and there is certainly no difference to be noticed especially in FSX.
That being said, if your budget allows for it I would get the lowest possible latency, but don't beat yourself up if you decide to get CAS8 instead.

You are going to drive yourself ….NUTS. Just go for what you want and be done with it. By the time you get your order in I'll have my New Machine up and running. The case came in about 1 hour ago and I have an outside chance of the other parts coming on Saturday. Not a good one but it may happen.

EDIT: Just realised the GTX 460 was being carried on. Any thoughts of upgrades on that? I would've thought it would really struggle with 3 monitors on its own

It should handle fine.
Matrox seems to handle the resolution fine. FWIW - I get way better FPS running the matrox with x3 lcd versus x2 lcd from the GPU output.
...besides out of general principal I can't. it's only 4 weeks old.

Ah fair enough. I guess it all depends on whether you'll play any game other than FSX. In any case it can't be hard to add another 460 - assuming the P8P67 Pro supports SLI (I seem to recall it does, albeit at 16x/4x)

I have to start working on an Insanity Plea for when the other half sees it. Then again she never notices anything I add but the New Case may give it away. OH WELL only time will tell but it doesn't hurt to get ready.
I do have to be NUTS to replace a machine running at 3.67 GHz QX9650 Extreme with a NVIDIA 480 Hydro in it. OH Well we will see.
What do you think Ben ……. By the end of next week?????
While I'm thinking about it I have to Thank You Again Ben for putting me onto the Electric Smoking. I saved almost all of the money for this machine by not smoking almost 3 packs a day at $7.50 +/- a pack.
